Blackened Tofu on Caesar Salad

This is a great and easy meal and I serve it with a good, warmed bread. Recipe yields several cups of blackened mixture; store in an airtight container. I use this mix on chicken and fish, too. I order organic bulk spices from Mountain Rose Gardens--cheap and fresh!

Extra firm tofu, cut into 1" cubes.
Blackened Mix
Canola oil

Coat tofu on all sides. Use a cast iron pan and coat it with some oil on a medium flame. Cook until tofu is nice and dark. Serve on a big Caesar salad.

2/3 cup paprika

1/3 cup cayenne

2/3 cup oregano

1/3 black pepper

1 ½ olive oil/canola

2 T white vinegar

anchovy paste

2 garlic pressed

3 T lemon juice

2 T Dijon mustard
